This cheese board is a guideline, you can customize and personalize your own to your liking. My suggestion for choosing variety is noted in parentheses. For a smaller cheese board, choose 3 cheese varieties to serve 5 – 6.

Yields: 10 – 12 people Prep time: 10 minutes

for the apple crackers:

juice of 1 freshly squeezed lemon

1 granny smith apple – thinly sliced

1 gala, pink lady or fuji apple – thinly sliced

for the cheese board:

about 1/2 pound Pecorino Toscano (firm, sheepÄ¢¹½ÊÓÆµ milk from Italy)

about 1/2 pound Gouda (semi firm, cowÄ¢¹½ÊÓÆµ milk from Holland)

about 1/2 pound Drunken Goat (semi soft, goatÄ¢¹½ÊÓÆµ milk from Spain)

about 1/2 pound Humboldt Fog (soft, goatÄ¢¹½ÊÓÆµ milk from USA)

about 1/2 pound Stilton (blue, cowÄ¢¹½ÊÓÆµ milk from United Kingdom)

fig jam

honey

variety of dried fruits and nuts: apricots, figs and/or cranberries. Candied walnuts and/or pecans

2 (4 1/2-ounce) packages table water crackers

Prep ahead tip: Can make cheese board up to 4 hours ahead. Cover and refrigerate. Remove to room temperature, 1 hour before your guests arrive for best flavor.

How to prepare the apple crackers:

Drizzle the lemon juice all over the apple slices. (Can store in a zipper bag, pushing out all the air and place in the refrigerator up to 4 hours ahead. The lemon juice will prevent the apples from browning.)

Arranging the cheese board:

Place the wedges of cheese onto the board, some standing up and some laying flat.

Arrange the fig jam and honey into two small separate glass or decorative bowls with a tiny spoon, onto the center or around the border of the board.

Freely place the dried fruits and/or nuts in between the cheeses, leaving room for your guests to be able to cut into each cheese. Don’t forget the cheese knifes for each cheese.

Stack the crackers throughout and fan spread the apple slices near the stilton (your blue cheese).

(Personal Note: My favorite cheese combination is to dress an apple cracker with the stilton then drizzle honey overtop. The sweetness of the honey cuts through the sharp pungency of the blue cheese, then finishes with a water crunch from the apple. To die.for.)
