How to grill perfect steak
Yield: 1 serving Prep time: 30 minutes Cook time: 15 minutes
n Start with a good quality steak
Remove the steak from the refrigerator, 25 minutes before grilling, to remove the chill.
Heat clean grill to medium — high heat.
Spray grill grates with non-stick cooking spray (Careful; watch for flare-ups)
n Season steak liberally with kosher salt and fresh finely ground black pepper (a good cut of meat doesn’t need a marinade)
n Lightly drizzle and coat steak with canola oil (so it doesn’t stick to the grill)
n Place steak on the hot grill grates at an angle and grill according to the thickness and desired doneness (note below)
Example: To grill a 1-inch thick steak to medium rare; Grill 2 minutes on an angle, turn (not flip) 90 degrees. Grill another 2 minutes (this will create cross marks). Flip steak. Grill 2 minutes on an angle, turn (not flip) 90 degrees. Grill another 2 minutes (this will create cross marks).
Remove to a plate to rest 5 minutes, to redistribute the juices.
Note: {Rule of thumb: Grill steak 4 minutes per inch per side for medium rare.
Grill steak 5 minutes per inch per side for medium doneness} For best flavor, grill to medium rare or medium.
Most Important: Do not touch the steak while grilling, that way it gets the best sear.
