Watermelon cosmos

These are great to serve as a signature cocktail when having a party. They’re fresh, fun and slightly tropical.

1 1/3 cup (1-inch) cubed seedless watermelon plus extra for garnish

1/4 cup cream of coconut

8 ounces (1 cup) premium vodka

6 ounces (3/4 cup) Grand Marnier

1/4 cup freshly squeezed lime juice

Chill four martini glasses in the freezer.

Puree 1 1/3 cup cubed watermelon and cream of coconut in a mini blender, fitted with a steel blade, until smooth.

Remove watermelon juice to a fine mesh strainer over a medium bowl (yield: about 1 cup juice). Skim and remove froth.

Make twelve melon balls with the extra watermelon, using a melon baller or measuring teaspoon.

Spike 3 watermelon balls onto one cocktail pick. Repeat, making 4 total. Set aside for garnish.

Add watermelon juice, vodka, Grand Marnier and lime juice into a cocktail pitcher. Stir well. Pour half of the mixture into a cocktail shaker, filled with ice and shake vigorously for 30 seconds.

Strain among 2 chilled martini glasses. Repeat remaining mixture.

Garnish with melon ball cocktail picks.

Makes: 4 (6-ounce) martinis.
