Cook This: Caramel Apple Martini

Caramel Apple Martini
1/4 cup lightly salted peanuts
4 granny smith apples
2 tablespoons freshly squeezed lemon juice (half of 1 small lemon)
2 tablespoon caramel sauce (Mrs. RichardsonĢƵ preferred)
8 ounces premium vodka
4 ounces caramel apple liqueur (Hiram Walker preferred)
Instructions:
Place peanuts into a food processor fitted with the blade attachment. Pulse until finely chopped. Remove to a rimmed plate. Set aside. Wipe out the food processor and reserve, if using for the apples.
For the apples:
If using a food processor:
Peel, core, and chop apples. Place into the reserved food processor. Puree until the apples are super fine and liquefied. Remove pureed apples to a large bowl lined with a piece of cheesecloth, about 20 inches by 20 inches. Fold the cheesecloth up and over the pureed mixture and twist (forming a purse). Wring and squeeze out the apple juice into the bowl. (Yields about 1 1/2 to 1 3/4 cups.) Stir in the lemon juice and set aside. (Note: You can prepare up to 6 hours ahead and refrigerate in a tightly sealed container. The apple juice will darken slightly over time, but thatĢƵ OK.)
If using a vegetable / fruit juicer:
Core the apples and quarter. Place apples through the feed tube, extracting the juice. (Yields about 1 1/2 to 1 3/4 cups.) Stir in the lemon juice and set aside. (Note: You can prepare up to 6 hours ahead and refrigerate in a tightly sealed container. The apple juice will darken slightly over time, but thatĢƵ okay.)
Microwave the caramel sauce on a rimmed plate until warmed through and pliable, about 10 seconds on HIGH.
Dip the rim of each of four chilled martini glasses into the warm caramel. Sprinkle prepared peanuts onto another rimmed plate and dip the caramel rim, lightly coating with the peanuts. Set aside.
Pour vodka, caramel apple liqueur, and 1 1/2 cups fresh apple juice into a large pitcher. Stir well. (Note: you may have some apple juice left over).
Fill cocktail shaker with ice and add half of the caramel apple martini mixture. Shake vigorously for 30 seconds and pour among two prepared martini glasses. Repeat second batch.
