Morsels: Something’s fishy about this birthday dinner

In our house, birthdays are all about food.

The celebrant is showered with undivided attention as well as favorite meals. When the special day falls on a weekend, he or she achieves “birthday weekend” status, which entails more food, more attention. Admittedly, it can be exhausting!

We celebrated my husbandĢƵ birthday last week. Without fail, he requested the same thing heĢƵ had on every birthday since childhood: salmon cakes made with canned salmon, macaroni and cheese and peas. Not fresh, mind you. Canned. Ugh.

I’m no fan of canned peas, and I really don’t care for canned salmon, but, hey, it wasn’t my birthday.

This year, I decided to change things up a little and use fresh salmon in place of canned. The peas were not negotiable. I didn’t want to rock his world too much. It was his birthday, after all.

At first, my husband was skeptical – disappointed even. But after one bite, he was a convert.

Granted, itĢƵ more labor intensive: You have to dice the salmon into tiny pieces to ensure the patties bind together, but the flavor is worth the extra effort.

There are benefits, too, of eating fresh: It contains less sodium and fewer calories than canned salmon packed in oil.

But the deciding factor for me came down to taste. Fresh salmon simply tastes better. 

I think I might have found my own new birthday favorite.

Salmon Cakes

Ingredients

1 to ¼ pounds fresh salmon fillets

¼ cup mayonnaise

1 teaspoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon Old Bay seasoning

¼ teaspoon salt

¼ teaspoon freshly ground pepper

Extra-virgin olive oil

1 to 1 ½ cups panko breadcrumbs

Dice salmon into pieces no larger than ¼ inch. Set aside. In a large bowl, whisk together mayonnaise, mustard, lemon juice, Old Bay, salt and pepper. Add salmon and ¼ cup of breadcrumbs and mix. Place remaining breadcrumbs in shallow bowl. Using an ice cream scoop, shape patties. Roll patties in reserved breadcrumbs and place on plate. In a large saute pan, heat oil. Place patties in pan and cook 2 to 3 minutes; flip them and cook another 2 minutes. Remove to a paper towel-lined plate to absorb excess oil. Serve.

ValentineĢƵ Day is Thursday, and the National Retail Federation expects more than $1.8 billion will be spent on candy alone.

Until this year, conversation hearts – those delightful little heart-shaped confections with romantic sayings like “Be Mine,” “My Love,” and “Marry Me” – eclipsed the heart-shaped boxes of chocolates as the top V-Day candy. ThatĢƵ because New England Confectionery Co., the manufacturer of the most popular brand, SweetHearts, went out of business, taking with it 80 percent of the convo hearts business.

Take heart (pun intended), friends. They’re expected to return next year. Spangler Candy Co. is bringing the perennial ValentineĢƵ Day favorite back to production.

Until then, it looks like M&Ms have taken the lead as the top ValentineĢƵ Day candy in Pennsylvania, followed by heart-shaped boxes of chocolate.
